GN 2/1 Stainless Steel Wire Grid with Stop Edge, for Large Production

In GN 2/1 size, this PADERNO grid fits large combi ovens and cabinets, or sits on a GN 2/1 container. Its edge, raised on one side, holds food in place when handling.

From Oven to Cooling

In the combi oven, it holds roasts, poultry and grilled vegetables, with hot air flowing all around. Out of the oven, it is used for cooling pastries, glazing and coating, resting meat or draining fried food, placed on a gastronorm container that collects the drips.
